Easy Basil Pesto Recipe

Sometimes, you just want to eat pasta with this thick creamy white sauce (or probably red sauce with meatballs on top) but you think about all those calories you've consumed for the day. Well, you don't have to completely deprive yourself of the cravings. You may still eat pasta, but to reduce that nagging guilt, try this healthier alternative: Pesto!




Ingredients: (Makes 10 Servings)

  • 1 can of tuna in brine (optional)
  • 1 and 3/4 cups fresh basil leaves (stems removed)
  • 1 and 1/3 cups of chopped walnuts or pine nuts
  • 3/4 cup of olive oil (extra virgin's better)
  • 2 and 1/2 cloves of garlic (peeled)
  • 3 tbsps of grated Parmesan cheese
  • 1 tbsp of lemon or calamansi juice
  • 1 and 1/2 tsp of sugar
  • salt and pepper



The Procedure:

  1. Using a food processor or blender, put the nuts in and pulse a few times. Follow it with basil and lemon/ calamansi and include the garlic afterwards.
  2. While still in pulse mode, add the tuna, then slowly pour the olive oil, the cheese, sugar, and finally, a dash of salt and pepper to taste.
  3. Serve over cooked pasta.



Note: You can use this sauce too over steamed fish, baked potato or even on toasted bread! I included a can of tuna in brine into it for added flavor but you may try experimenting with other ingredients as well.
